An experimental release of our 2016 vintage, with zero dosage. This forms part of our 'Special Dosage' series, but a few bottles are available to buy individually.
- Eyes
A lovely pale gold in colour, with a persistent stream of fine bubbles.
- Nose
A taut and linear palate - finely detailed citrus and lemon peel notes give way to warm, savoury yeast and brioche aromas
- Mouth
Our 2016 carries the signature Hart of Gold mouth-watering zing, but with a great deal of complexity from long lees ageing, adding savoury, bready richness to the citrus and apple fruit. There is no softening sweetness to moderate the acidity on the palate, so this is a bracing mouthful, perfect with oysters!

Beautiful grapes in excellent condition were harvested in early October, and brought down to Ridgeview for whole bunch pressing and fermentation. Each grape variety is harvested separately. The base wine is then blended, mixed with liqueur de tirage (a syrupy mix of wine, sugar and yeast), and sealed in a bottle with a crown cap to being the secondary fermentation (which is where the bubbles come from). This wine has spent over 5 years in the bottle in contact with the lees before disgorgement in August 2022, and no dosage was added.

https://www.jancisrobinson.comLime-green florals on the nose. Intense wild-apple acidity, bone-crunchingly crisp; citrus spun into steel wires stretched close-to-snapping taut, end to end. But towards the finish, there’s a suggestion of toasted hazelnuts, a savoury roasted-rye-grain undertow. This will age in bottle. In fact, I’d recommend anyone buying this wine to lay it down for another couple of years at least. (TC)

https://wine-pages.comDisgorged in August 2022, this wine has absolutely no sweetening dosage added. That makes it a very bracing and crisp style, with a lemony freshness of fruit. There is some bready, biscuity complexity to the aroma through that long lees ageing, but then the palate zings and zips to an exhilarating finish.
