An experimental release of our 2016 vintage, with a dosage containing a few drops of Tokaji Essencia. This forms part of our 'Special Dosage' series, but a few bottles are available to buy individually.
A lovely pale gold in colour, with a persistent stream of fine bubbles.
A taut and linear palate - finely detailed citrus and lemon peel notes give way to warm, savoury yeast and brioche aromas. The beeswax note adds evocative complexity.
Our 2016 carries the signature Hart of Gold mouth-watering zing, but with a great deal of complexity from long lees ageing, adding savoury, bready richness to the citrus and apple fruit. The Essencia dosage fills out the finish superbly with a seamless richness, and a satisfying deliciousness.
- Winemaking Notes
Beautiful grapes in excellent condition were harvested in early October, and brought down to Ridgeview for whole bunch pressing and fermentation. Each grape variety is harvested separately. The base wine is then blended, mixed with liqueur de tirage (a syrupy mix of wine, sugar and yeast), and sealed in a bottle with a crown cap to being the secondary fermentation (which is where the bubbles come from). This wine has spent over 5 years in the bottle in contact with the lees before disgorgement in September 2022. A liqueur containing a few drops of the incredibly rare and highly valued Tokaji Essencia (from the Royal Tokaji Wine Company) was used to bring the dosage up to 8 g/l

An excellent choice with canapés, especially seafood, and the Tokaji influence might suggest trying with Foie Gras

Lime-green florals on the nose. Intense wild-apple acidity, bone-crunchingly crisp; citrus spun into steel wires stretched close-to-snapping taut, end to end. But towards the finish, there’s a suggestion of toasted hazelnuts, a savoury roasted-rye-grain undertow. This will age in bottle. In fact, I’d recommend anyone buying this wine to lay it down for another couple of years at least. (TC)
There’s just 4mls of the extraordinarily sweet (@ 581 g/l) Tokaji Essencia 2008 as part of the dosage here, so it’s perhaps not too surprising that it doesn’t mark the nose or palate too markedly. Is there just an aromatic hint of the intense, raisiny essencia, or is that auto-suggestion? There is certainly some biscuity character over lemony fruit. The palate is intense and dry, with again plenty of lemony thrust, a pithy bite of dryness, not at all aggressive. Fascinating, though the essencia not too evident.
