In addition to Domaine of the Bee, Justin makes English sparkling wine. He has worked closely with the Roberts Family at Ridgeview to produce Hart of Gold. The wine is from the good quality 2017 vintage, disgorged in August 2023 after 5+ years on the lees.
- Eyes
A lovely pale gold in colour, with a persistent stream of fine bubbles.
- Nose
A bright and energetic palate - with elegant and expressive citrus notes - this shows well-defined and expressive fruit, and plenty of savoury richness from extended lees ageing.
- Mouth
Our 2017 shows bright lemony acidity and the palate builds in complexity from long lees ageing, there's a bready richness to the citrus and apple fruit. Excellent length.
- Winemaking Notes
Beautiful grapes in excellent condition were harvested in early October, and brought down to Ridgeview for whole bunch pressing and fermentation. Each grape variety is harvested separately. The base wine is then blended, mixed with liqueur de tirage (a syrupy mix of wine, sugar and yeast), and sealed in a bottle with a crown cap to being the secondary fermentation (which is where the bubbles come from). This wine has spent nearly six years in the bottle in contact with the lees before disgorgement in May 2021.
- Growing Conditions
A year which was warmer than usual in the winter and spring gave on to a cooler and wetter July, August and September. But crucially, early October was dry and warm, and harvest conditions were excellent.
- Food Pairing
The perfect aperitif which is also delicious with lightly smoked fish, and all sorts of salads. Or salted nuts and olives.
