An experimental release of our 2016 vintage, with a dosage containing 5 Puttonyos Tokaji. This forms part of our 'Special Dosage' series, but a few bottles are available to buy individually.
- Eyes
A lovely pale gold in colour, with a persistent stream of fine bubbles.
- Nose
A taut and linear palate - finely detailed citrus and lemon peel notes give way to warm, savoury yeast and brioche aromas. Hints of saffron and beeswax.
- Mouth
Our 2016 carries the signature Hart of Gold mouth-watering zing, but with a great deal of complexity from long lees ageing, adding savoury, bready richness to the citrus and apple fruit. The dosage adds hints of honey, and a golden richness that carries through for an excellent and satisfying finish.

- Winemaking Notes
Beautiful grapes in excellent condition were harvested in early October, and brought down to Ridgeview for whole bunch pressing and fermentation. Each grape variety is harvested separately. The base wine is then blended, mixed with liqueur de tirage (a syrupy mix of wine, sugar and yeast), and sealed in a bottle with a crown cap to being the secondary fermentation (which is where the bubbles come from). This wine has spent over 5 years in the bottle in contact with the lees before disgorgement in September 2022. A liqueur containing 5 puttonyos Tokaji (from the Royal Tokaji Wine Company) was used to bring the dosage up to 8 g/l

An excellent choice with canapés, especially seafood, and the Tokaji influence might suggest trying with Foie Gras

https://www.jancisrobinson.comA rather seductive nose of apricot jam and ginger-syrup-glazed melon over the fresh scent of grapefruit blossom. It certainly has the piercing acidity of the Z Zero (non-dosage) wine in the series. It strikes through the wine like the sound of a Tibetan gong through a silent, snow-covered valley. Bitter orange peel, lime pickle. Intense, powerful and tight with a single line, an almost-erased trace, of smoke. The sweetness is tucked into the back of the wine: dried apricot, poached golden peach, quince. But still controlled by fierce tension. Not a wine to drink too cold. It becomes more exotic and exciting as it warms. (TC)

https://wine-pages.comEach bottle was hand-dosed with 15.2mls of Tokaji 5 Puttonyos Tokaji, then the dosage adjusted to take the total sugar level to 8g/l. The nose has a custardy, slightly toffeed note which may, or may not, be influenced by the Tokaji dosage. In the mouth there’s a perceptible ripeness and mid-palate sweetness to this despite the modest dosage. There’s a lovely clarity and precision to the lemony thrust of fruit and acidity, and there’s a sense of concentration too. Long and sheer, the pillowing generosity of the mousse and that hint of sweetness in the background is beautifully tensioned against the lemon and salts acidity.
